Coconut Pancakes at Grandma’s

We’re at grandma’s and decided to make breakfast. I found a general cookbook (old enough to include pressure cooker recipes!) and modified the first pancake recipe to be lactose free.

The Pancake Recipe
3-6 cups water
3 eggs
2 tsp salt
2 tblsp honey
3 1/2 tsp baking powder
1 can coconut cream (~6oz)
3 cups flour

Put it all in the blender starting with at least 3 cups of water. This prevents the base from getting clogged with flour. Stir with a scraper and add more water to consistency. Blend to finish mixing.

We then cooked them in a cast iron pan with coconut oil. They came out nice and light, yum! You’d never know the coconut was there. The original recipe called for butter and milk and 6 tblsp sugar.
